Whole 30 -- Day 3 (again)

Up at 9

Breakfast: Cantaloupe, Coffee

Lunch: Bell Peppers and Tuna

Dinner: Summer Squash, Pan-seared Flounder

Snack: Baked Gala Apples with Allspice, Nutmeg and Clove

I'm starting to get my groove back after being in the hospital. The house is slowly looking better. The diet is still a habit, so even though there are cravings, it's easier to re-focus myself. I am still tired and weak feeling, though I am sure it's due to the carb binge that was my weekend. Tomorrow will be rough if it follows last week, but I am ready. I'm halfway through the hardest part.

Whole30 -- Day1 (again)

Up at 11am, slept hard after coming home from the hospital.

Breakfast: Coffee

Lunch: Steak, Broccoli, Zucchini, Carrots

Dinner: Chicken, Broccoli, Zucchini, Carrots

Easy day...it helps that I already know what to expect. Snacking on Watermelon tonight before bed. IF I close my eyes it's almost ice cream...

Whole30 -- Day 6 -- Ugh

Up at 10am

Breakfast: Coffee, Eggs, Bell Peppers, Chicken


Coffee has become my link to sanity. Thank goodness I can still have it.

OK, blog readers, today I started falling asleep randomly. Hand to Jesus, I would be in the middle of talking, walking, cooking or anything at all and would just fall asleep. Obviously I went to the hospital, where they remain baffled after 3 days as to the cause, but have managed to treat the symptoms enough to send me home. Yay for mysteries!! In the beginning, when I told them I was on the Whole30 diet, they jumped on that and told me that was why I was having these "episodes" and made me eat crackers, bread, cake and waffles. On day 2, my doctor FINALLY read my food journal that I had with me, and told me there was NOTHING wrong with the diet, and actually started looking for other causes. Long story short, I am on new meds that are keeping me from having sleep attacks or whatever they are, and am starting Whole30 back tomorrow. Day 1. Again. I have to go through all of the cravings and mood swings again. so. Let's see how tomorrow goes.

Whole 30 -- Day 5

Woke up at 7am

Gym from 8:45-10:30

Breakfast: Coffee

Lunch: Orange Juice (100% juice, no sweeteners added)

Dinner: Chicken Breast

Today was actually an easier day, I had a lot more energy and no cravings or mishaps or cheating. I didn't actually feel hungry all day, which makes it harder to munch on these foods that I'm not used to yet, like bell peppers and carrots. I told myself I would eat when I actually felt hungry and that didn't happen until 6, when I dropped my son at karate and drank a 12oz OJ to stop the hunger pangs and audible growling. At least it was only fruit juice. Maybe this is what happens when your body realizes that it's already coated in enough fat to survive 2 winters and it doesn't actually "need" to eat to survive. We'll see how tomorrow goes.

Whole 30 -- Day 4

Slept until 10am

Breakfast: Apple

Lunch: Spaghetti Squash and Broccoli

Snack: Pistachios and 3oz juice

Gym: 3p-5p

Dinner: Roasted Pork Loin with Apples and Butternut Squash

Hard hard day. Pitched a fit on Dave this morning and cried over not being able to have any carbs. Cravings are hitting really hard today and I am fighting back with waning energy. Whole30 Daily said this was to be expected. I just keep thinking back to before I started, how badly I wanted to do this and learn how to be healthier and lose weight and feel better. It's supposed to get easier soon. I really hope it does.

Dinner: Munched on Olives near bedtime

Not enough energy to work out

Very frustrating day, almost cheated several times. I'm having a hard time watching the kids and Dave eat "normal" food. I'm very close to putting the whole family on Paleo...

Whole30 -- Day 2

Up early! 7am

Breakfast: Bacon, eggs, fruit
(at Cracker Barrel with Jon)

Lunch: Spaghetti Squash, Chicken

Snack: Blueberries, Pistachios

Dinner: Acorn Squash, Salmon, Green Beans

The whole family loved the roasted Acorn Squash in lieu of potatoes in last night's dinner.

  • Recipe:
Pre-heat pan with coconut oil in oven to 350.
Wash and chop squash into 1-2" pieces.
Coat squash in hot pan of oil, sprinkle with chili powder, allspice.
Cook for 15-20 minutes, flipping them and re-seasoning and salting halfway through.
We're going to try mashing them next.

We worked on a friend's family vineyard today, so definitely got come cardio and strength training! Cleaned out a small barn to be used as a tasting room and re-organized the big barn a little bit. Hopefully can get some more work there soon, I love that place and that kind of physical work. Makes the day feel great! Still some tummy troubles today but not as bad. Hoping that particular little side effect will be finished soon. Reached for juice a lot today, a sip at a time, to quell that sweet craving. Need to make sure I do that less tomorrow.

Whole30 -- Day 1

Starting Weight: 250lb.

Ugh -- That takes guts, folks.

Breakfast: Spaghetti Squash Hash Browns, Fried Eggs (in coconut oil, of course)

Snack: Cantaloupe, Black Coffee

gym: 3p-5p

Dinner: Turnip Greens, Salmon

Snack: Cantaloupe

Turnip greens didn't turn out well, going to have to call my grandmom and get her recipe. The salmon was delicious, though!


  • Recipe:
Salmon fillets, dried and rubbed with lemon pepper and sauteed in coconut oil. 3 mins each side on med. high heat. You'll get to where you know when it's time to flip, just watch the centers cook.

I made a batch of mac and cheese for the kids a couple of days ago and I keep re-using it. Tonight Bitsy ate Salmon and noodles and LOVED it. She also got to try a cantaloupe for the first time and loved it.

One of the things I am loving about this is that I am getting to learn how to cook a lot of different dishes, and I am also learning how to cook healthy food that tastes really good. If I can stick with this it's going to change a lot of things about me. And it's going to be better for my family. I can raise the kids to eat healthy. Anyway, rambling. 

Almost cheated after breakfast, but I had 2oz of juice (100% juice, no added sugar) and it helped get me through. Starting to have some tummy issues, but I guess that's to be expected when you go from the crazy carbs I was eating to hardly any at all. It's not so bad I can't deal. 

The email from Whole30 Daily helped a lot. I stuck some notes to myself around the kitchen. Keep out signs on the cabinet full of crackers and cookies (I have 2 kids, so I couldn't throw it all out) and a list of suggestions on what I can eat if I am too tired to come up with a recipe. Today has been easier than yesterday. I am excited to get back in the gym tomorrow.

Whole30 -- Easing In -- Not the Best of Days

I cheated today. The kids were fighting like crazy and I was short tempered and PMSing and I gave in to a fall tree Little Debbie. Tomorrow is supposed to be my "real" start date so I will suck it up and start over. Wish me luck!
